Banana Bread – Soft and Simple
It’s banana bread time again—which, let’s be honest, is any time bananas go spotty and start whispering from the counter: “Hey… bake with me.” I gave in (again), and I’m not mad about it. This recipe is soft, not too sweet, and super easy. It’s the kind of thing that makes your kitchen smell like a warm hug.
I used the classic loaf tin this time, but you can absolutely turn this into a cake if you feel like it. Just pick your pan and trust the bananas to do their thing.
What You’ll Need:
- 3 ripe bananas, mashed
 - 113g (½ cup) butter, melted
 - 150g (¾ cup) sugar (white or brown—your choice!)
 - 2 eggs
 - 1 tsp vanilla extract
 - 190g (1½ cups) flour
 - 1 tsp baking soda
 - ½ tsp salt
 - ½ tsp cinnamon (optional, but highly recommended)
 - 60ml (¼ cup) milk or yogurt (for extra moisture)
 
How to Make It
1. Preheat & Prep
- Set your oven to 175°C (350°F).
 - Grease a 9x5-inch loaf pan or a cake pan—whatever shape you’re going for.
 
2. Wet Stuff First
- Mash the bananas in a big bowl.
 - Add melted butter, sugar, eggs, vanilla, and milk/yogurt. Stir until everything’s smooth-ish.
 
3. Dry Stuff in Another Bowl
- Mix together flour, baking soda, salt, and cinnamon.
 
4. Bring It All Together
- Gradually fold the dry ingredients into the banana mix.
 - Don’t overdo it—just mix until you can’t see any more flour.
 
5. Bake It
- Pour the batter into your prepared pan.
 - Bake for 50–60 minutes (if you’re making bread) or 30–40 minutes (if it’s cake).
 - It’s done when a toothpick comes out clean and your kitchen smells like magic.
 
6. Cool & Eat
- Let it chill in the pan for 10 minutes, then move it to a rack.
 - Eat warm, room temp, or straight from the pan when no one’s looking.
