Chocolate Chip Cookies – Chewy, Chunky & a Little Too Good

Sometimes you just need a chocolate chip cookie. Or twenty. These ones are chewy in the middle, a little crisp at the edges, and packed with chocolate chunks that melt into little puddles of joy. It’s a small effort, big reward kind of recipe—aka my favorite kind.

If you’re anything like me, you’ll probably eat the first cookie standing by the oven, then pretend the second one didn’t happen. No judgment here.


What You’ll Need:

  • 160g unsalted butter, melted
  • 60g brown sugar
  • 1 tbsp honey or maple syrup (optional, but makes a difference)
  • 1 large egg + 1 extra yolk
  • 2½ tsp vanilla extract
  • 290g all-purpose flour
  • 1 tsp baking soda
  • ½ tsp salt
  • 200g chopped chocolate (go dark, go milk—up to you)
  • Flaky salt for topping (optional but excellent)

How to Make Them:

1. Preheat & Prep

  • Heat your oven to 180°C (350°F).
  • Line a couple of baking sheets with parchment paper.

2. Wet Mix

  • In a bowl, whisk together melted butter, brown sugar, and optional honey or syrup.
  • Add in the egg, extra yolk, and vanilla. Whisk until creamy and smooth.

3. Dry Mix

  • Add the flour, baking soda, and salt. Stir until just combined—no overmixing.

4. Chocolate Time

  • Fold in all that lovely chopped chocolate.
  • Chill the dough for 30–60 minutes if you’ve got the time. It makes the cookies even better.

5. Scoop & Shape

  • Scoop out dough balls—about 2 tablespoons each.
  • Place them on your tray and flatten them a bit to the size you like.

6. Bake

  • Bake for 9–11 minutes, just until the edges look set.
  • They’ll keep baking a little as they cool, so don’t overdo it.

7. Cool (or Not)

  • Let them sit on the tray for 5 minutes, then transfer to a rack.
  • Or just eat one right off the tray. You’re the boss.

Tips & Variations:

  • Use chunks instead of chips—they melt better and look more dramatic.
  • Add a sprinkle of flaky salt on top before baking for a salty-sweet moment.
  • Want to be fancy? Swap a bit of the chocolate for toffee bits, nuts, or even chopped dried fruit.
