Chocolate Chip Muffins – Soft, Sweet & Perfectly Chunky
There’s something about muffins that feels cozy and low-key fancy at the same time. Especially when they’re packed with melty chocolate chunks and that perfect golden muffin top. These chocolate chip muffins are soft, fluffy, and just the right amount of sweet. No fuss, just good vibes and better snacks.
Great for breakfast, afternoon treats, or stress-baking at midnight. No judgment here.
What You’ll Need (Makes 12 Muffins)
- 2 cups (250g) all-purpose flour
- 1 tbsp baking powder
- ½ tsp baking soda
- ½ tsp salt
- ½ cup (115g) unsalted butter, melted
- 50g (¼ cup) brown sugar
- 2 large eggs
- 1 cup (240ml) buttermilk (a little extra splash makes them extra soft)
- 1½ tbsp vanilla extract (yes, that much – trust me)
- 1¼ cups (200g) chocolate chips or chunks (save a few for topping)
Let’s Make Muffins
1. Preheat & Prep
- Preheat your oven to 375°F (190°C).
- Line a 12-cup muffin tin with paper liners or grease them lightly.
2. Dry Ingredients
- In a big bowl, whisk together flour, baking powder, baking soda, and salt.
3. Wet Ingredients
- In a separate bowl, whisk together melted butter, brown sugar, eggs, buttermilk, and vanilla until smooth.
4. Mix it Up
- Pour the wet mix into the dry ingredients and gently fold it all together.
- Don’t overmix—just stir until you see no big streaks of flour.
5. Add the Chocolate
- Fold in most of the chocolate chips/chunks, keeping a handful aside for the top.
6. Fill the Tins
- Divide the batter evenly between the muffin cups—about ¾ full.
- Sprinkle the rest of the chocolate on top for that bakery-style look.
7. Bake
- Pop them in the oven for 18–22 minutes, or until a toothpick comes out with a few moist crumbs.
8. Cool & Devour
- Let them cool in the pan for 5 minutes, then move to a wire rack (or straight to your plate).
Tips & Extras
- Want a little crunch? Add a tablespoon of turbinado sugar on top before baking.
- Swap in white or dark chocolate for a twist.
- These freeze beautifully—if you somehow don’t eat them all on day one.
That’s it! Soft, fluffy muffins with big melty chocolate energy. Easy enough for a weekday, but impressive enough for guests (or just for you).
